Trippa and Lampredotto are very popular types of meat eaten in Florence. Tripe (la trippa) is the organ found in the first or second compartment of the cows stomach. It is apart of their digestive system. This can be prepared many different ways but is most commonly served with tomato sauce. Lampredotto is also from the stomach of a cow but doesn’t appear as white but more of a light brown. It is is boiled in a vegetable and herb broth and then sliced into thin pieces. It is most commonly eaten with bread on a sandwich.
